Making Baked Pie Company’s Chocolate Bourbon Pecan pie

Good morning, Asheville. If I had to guess, I’d bet many of you are spending more time than usual whipping up tasty eats at home. I know I am. It’s not only a necessity – some experts have likened baking and other hobbies to a survival instinct, as it can be a useful way to mediate the anxiety that can come from the intense stress + uncertainty a global pandemic creates. Making sweets + desserts can be particularly comforting.  

And today, in honor of National Pecan Day, I am super excited to share with you something extra delicious: a chocolate bourbon pecan pie recipe from none other than Baked Pie Company

Have you ever had the chance to visit? While they’re currently closed due to the pandemic, they have locations in Arden + Woodfin, as well as slices on offer at the Asheville Regional Airport. Their homemade pies come in a wide array of varieties — including more than 100 rotating flavors like hazelnut cream, red velvet, blueberry crumb, banana pudding, and peanut butter-oreo cream — and are absolutely heavenly. My very favorite way to enjoy them is their pie flights, wherein you get your choice of three slices of pie and a scoop of vanilla bean or salted caramel ice cream. They also won my heart for life when they let my daughter choose a stuffed animal from their bin to take home with her. 

But that’s not all they’ve done to make me a lifelong fan + customer. When the pandemic first began, Baked Pie Company was among the first of local eateries to offer free bagged lunches to needy kids. They announced last week that they were suspending this operation temporarily, but fret not: you can still support them until they’re able to open their doors again by donating or buying a gift card

Chocolate Bourbon Pecan Pie

Crust: unbaked pie crust of your choice

1/2 cup butter (unsalted)

3/4 cup sugar

3/4 cup corn syrup

4 eggs

1/4 cup bourbon

1 tsp. vanilla

1/4 tsp. sea salt

1 cup chocolate chips

1 cup pecans


  1. Preheat oven to 325 degrees
  2. Heat butter, sugar, and corn syrup in a saucepan over medium heat until sugar dissolves. Set aside to cool.
  3. Combine eggs, bourbon, vanilla, and salt. Add to the cooled sugar mixture and mix.
  4. Stir in chocolate chips and pecans. Pour into the unbaked pie shell.
  5. Bake at 325 for 50-55 minutes or until set. Remove from the oven and allow to cool completely before serving.
