Our mouths were already watering when Chef Luis Martinez announced two weeks ago that he was preparing to open Taqueria Rosita. Now, we’re getting ravenous with the news that the taqueria will be housed inside The Odd, with limited service on Thursday, Aug. 29 and Friday, Aug. 30 from 4 p.m. to 9 p.m.

Martinez, who is also the founder of Tequio Foods, a fair trade initiative importing ancestral corn and beans from Indigenous farmers, said the new spot is born out of “pure corn love,” paying homage to his home of Oaxaca, Mexico. In an interview with Eater Carolinas, the chef shared that the taqueria will use heirloom corn along with local ingredients to create tlayudas, memelitas, and tacos.

Starting Wednesday, Sept. 4, Taqueria Rosita will be open Wednesday-Friday, 4-11 p.m.
